Salmon Mediterranean Style

There are certain recipes that can be recommended even to people who have absolutely nothing to do with cooking, because they are so simple. This is one of them.
The actual "cooking" is done by the oven, the only thing you have to do yourself is prepare the various ingredients and put them together.

Start with a good piece of salmon
Salmon has become a commodity in recent decades. It is also a fish that many people eat who otherwise do not like fish. Thus, with this dish you can hit several birds at once.
I can not repeat it enough: Low quality food does not make a high quality dish
As always, buy a good (and especially fresh) piece of fish.
When it comes to ingredients, let your imagination run wild
In my recipe I have integrated all the ingredients that came to mind although there would have been more.
The most important thing in the preparation is to have all the ingredients ready and then just "assemble" them. No ingredient is a must (except the fish, obviously).
At the end, let the oven do its magic.

Ingredients
For 4 people
600g - 700g salmon fillet without skin (in individual pieces of 150g - 175g per person)
1 tin of chopped tomatoes
1/2 jar of a good pesto sauce
1 large red onion
8 cloves of garlic
150g black olives
2 tablespoons of small capers
150g feta cheese
10 cherry tomatoes
1 jar of artichoke hearts (preserved in oil)
Olive oil
Preparation
Preheat the oven to 180° (fan).
Mix the tomato sauce with the pesto.
Cut the onion into rings and chop the garlic into coarse pieces.
Cut the feta cheese into small cubes. Halve or quarter the cherry tomatoes.
In a large ovenproof dish, first spread some of the tomato-pesto sauce. Then place the onion rings. On top of the onion rings follow the salmon fillets.
Around the salmon fillets, spread the additional ingredients (olives, capers, artichokes, cherry tomatoes).
Now the rest of the tomato pesto sauce is spread on the fish and over the remaining ingredients. Finally, spread the pieces of feta on top of everything.
Sprinkle it with some olive oil.
Put the dish in the preheated oven and let it cook for about 25 minutes.
Tastes great with a fresh garlic bread (or with rice, that's how my kids like it).
